These are really simple to make and just gorgeous served warm with whipped cream and blueberries.
I used 280g of plain flour, a pinch of salt and a teaspoon of baking powder, mixed them with 150g of frozen blueberries and 115g of brown sugar.
After beating 2 eggs I combined them with 250ml of milk, 85g of melted and cooled butter, a teaspoon of vanilla extract and a grated rind of a lemon.
I spooned them into a greased tin. 3 of them I used paper cases. Big mistake! Later, the paper stuck and was impossible to remove.
